Sunne Joy Heubach is a fifth generation Pensacola native, where she now lives with her children and husband, Beau. In 2011, Sunne began to develop an allergic reaction to certain preservatives, particularly those used in commercially produced bread. Still having a love for fresh baked bread, she decided to start baking bread for her family. With a desire to make the healthiest bread, most nutritious bread for her family, she began reading and researching about traditional methods of preparing grains. Following the Weston Price’s guidelines, she soaks her grains.
Her passion for creating delicious and healthy breads and a love of the local food movement, led Sunne to start selling her baked goods at the Palafox Market. Her passion has now rubbed off on Beau who has now joined her in the kitchen and is assisting her with the baking duties. They both enjoy hearing the crackling from the bread as it comes out of the oven, it is what bakers call the bread’s “song.” The process of experimenting with new breads is a challenging adventure, however their favorite part of the process is getting to know each customer personally, at the markets.
